Vegan Blueberry Scones

Ingredients:

1/2 flax egg: 1/2 tbsp. flax meal + 1 1/2 tbsp. water
3/8 cup almond milk
1 cups all-purpose flour
1/2 tbsp. baking powder
1/8 cup sugar, plus more for topping
1/4 tsp. sea salt
3 tbsp. room temperature coconut oil
1/4 cup frozen blueberries

Directions:

1. Preheat your oven to 325 degrees. Sift your flour and then add in baking powder, sugar, and salt.
2. Add in your coconut oil and use a fork to mix the oil until it's pea-sized.
3. Add in the milk and flax egg and mix until you get a dough-like consistency.
4. Add in the blueberries and flour your surface to begin rolling out the dough.
5. Once your dough is rolled out to be about ¾ inch thick, cut the dough into 8 triangles with a pizza cutter.
6. Sprinkle some extra sugar on top and bake for 25 min at 325 degrees.
