Carrot Fettuccine

Ingredients:

6 ounces uncooked whole-wheat fettuccine
2 medium carrots (shaved into carrot ribbons)
2 tsp. olive oil
½ cup sliced shallots
4 garlic cloves, minced
2 tbsp. all-purpose flour
2 cups milk
½ tsp. kosher salt
3/4 tsp. black pepper
2 ounces parmesan cheese
½ tsp. red chili flakes
½ italian seasoning

Directions:

1. Cook pasta according to package directions.
2. Add carrots during the last 3 minutes of cooking.
3. Drain the pasta.
4. Heat oil in a medium saucepan over medium-low. Add shallots, garlic, italian seasoning, and red chili pepper; sauté 5 minutes.
5. Stir in flour; cook for 30 seconds.
6. Add milk to pan; bring to a simmer. Cook for 5 minutes or until reduced to about 1 and a 1/2 cups.
7. Stir in salt, pepper and 1/4 cup cheese until smooth.
8. Add pasta mixture to milk mixture; toss.
