1 cup colored mini sweet peppers diced
2 cup onions diced
2 tsp. garlic, minced
Water as needed
1 cup tomato sauce
1 cup cooked black beans
1 cup cooked pink beans
1 cup cooked navy beans
1 cup cooked small red kidney beans
1 tsp. cumin
1 tsp. salt
1 tsp. pepper
1 tsp. paprika
1 tsp. taco powder
½ tsp. roasted garlic and herb powder
1 tsp. sugar
Corn starch as needed to thicken
Directions:
1. In an Instant Pot, saute the diced onions and red pepper until the onions turn clear.
2. Add garlic and saute together well for about a minute.
3. Add cumin, salt, pepper, paprika, taco powder and roasted garlic and herb powder and mix until well combined.
4. Add tomato sauce and sugar.
5. Add all the 4 types of cooked beans to the pot and mix well.
6. Close the lid and cook for 1 minute.
7. Open once the pressure releases naturally and Soup is ready.
8. If the soup has a thin consistency, then add cornstarch diluted in water to thicken the soup.
9. Serve it warm with chips. Enjoy!
